This coffee is produced by Javier and his brother Hector. The brothers are both members of the Tres Rayas Coffee Cooperative. This lot was exposed to an extended anaerobic fermentation of 34 hours and shade dried in parabolic beds until ideal moisture was reached. This microlot is 100% Caturra varietal which originated at Minas Gerais in Brazil. It is a natural mutation of the Red Bourbon. Caturra has a higher yeild and is more resistant to disease than Bourbon.
*We roast on Mondays and Tuesdays. All orders placed before Tuesday 9am (AEST) will be sent out on Wednesday morning. All orders placed after that will be roasted the following week. **If ordering later in the week, we may have some spares on hand that we can send to you straight away.
